You wouldn’t believe that you can create a delicious, creamy soft-serve ice cream-like treat with only one ingredient and no dairy, but it’s true.

One  ingredient can deliver a similar texture to soft-serve ice cream with the satisfaction of knowing that the treat contains significantly less fat and calories.

Try out this delicious banana soft serve recipe to satisfy your cravings for ice cream without the guilt. This recipe contains only 150 calories and 0.5 grams total fat per serving, as opposed to the traditional, store-bought counterpart, which typically contains 405 calories and 27 grams total fat per serving.

This recipe calls for frozen, ripe bananas, so the next time your bananas are beginning to turn brown, slice them and store them in your freezer for later use.

Banana Soft Serve

Makes 2 servings

Serving size: ¾ cup

You will need:

  • 3 large, ripe bananas
  • Plastic storage freezer bag
  • Food processor or blender
  • Freezer

Instructions:

  1. Peel ripe bananas and cut into ½-inch slices.
  2. Place all banana slices into a plastic bag and spread out until bananas lay flat in the bag. Freeze.
  3. Remove plastic bag from the freezer and empty contents into food processor or blender. Process/blend until the bananas are no longer solid. The frozen bananas will break down and eventually reach a consistency and texture which is similar to that of real ice cream.
  4. Empty contents into bowls, enjoy.

This soft serve treat is delicious as is, but trying the following modifications will enhance the flavor and increase the nutritional value of your treat.

  • Blend half of an avocado into the mixture. This adds creaminess and contains essential healthy (or unsaturated) fats, fiber, potassium and vitamins K, B6, E and C.
  • Blend 2-3 tablespoons of natural peanut butter into the mixture. This enhances the taste and contains unsaturated fats, fiber, potassium, magnesium and vitamins E and B6.
  • Sprinkle coconut flakes or dry chopped nuts to add texture while delivering protein and fiber.
  • Top with sliced fresh or dried fruit, such as pineapple or strawberries, to add sweetness and vitamin C.
